BILL POST, THE SAINT WHO INVENTED POP TARTS, PASSED AWAY AT 96
Sad, if nostalgic, news. I never knew this man’s name until hearing about his death. Though for many years, I really appreciated him. Though not, possibly, as much as the medical industry did for increasing the likelihood I’d develop diabetes. Because you see, the man who passed away at age 96 was Bill Post, who was the team leader of the team that created the delectable and far too easy to eat breakfast walk of shame, Pop Tarts. And if, by some minuscule chance, you don’t know what Pop Tarts are, they are technically a breakfast sandwich.

POP TARTS, IF YOU DIDN’T KNOW, ARE TECHNICALLY BREAKFAST SANDWICHES
But even if you, you liver and your personal physician are all familiar with Pop Tarts, you are all probably surprised to hear that they fall into the sandwiches category. Many, many years ago, Kellogg’s then executives came up with the idea for a new product, “like a piece of pie, the shape of a slice of bread, fork marks around the edge, two pieces of dough with some filing in.” With the intent, of course, to be cooked quickly in a toaster. But it’s the two pieces of dough with something in the middle that surprisingly makes Pop Tarts sandwiches, formally.

And Bill Post was an amazing overachiever who played a key leadership role in making Pop Tarts a reality. At just 21, he was the personnel manager for Kellogg’s, and had a hand in all aspects of the company’s business, including product development. When Post heard the executives’ idea, he made it the easy college breakfast reality so much of us are familiar with. Though, to be completely forthcoming, I must admit to eating a double package of them just a month ago from a vending machine.
I’m convinced my doctor somehow knows… So thank you, Bill Post! Your legacy lives on in my blood sugar counts!
