There is a beauty in waiting a whole year…but you don’t have to anymore. Here are awesome rum balls you can make yourself and please people everywhere, anytime. Don’t wait. And you better be buying some rum today (the good stuff)!
DON’T WAIT, ROLL YOUR BALLS TODAY
So, get yourself the good stuff. The darker the rum the better. But, honestly, if all you have is a light rum, that is A-okay. You can still make a mean rum ball, that will pack a punch. It’s just better with a dark rum. And don’t wait to clean your hands, ‘cause you will be rolling your rum balls. This recipe makes about twenty-four rum balls.

THIS IS THE GOOD STUFF, ROLL THESE THRU NEW YEAR’S
People may think you are nuts to be using the good stuff, but don’t mind them. If they have a major issue they can just hang out alone while you and your crew get munching and tipsy. Best rum to buy is the bartender’s best friend, Appleton Special. El Dorado Rum, twenty-one years is pretty nice too. Zacapa is tender. You choose what pleases your taste buds.
RUM BALLS THE RECIPE
Don’t wait…start rolling your rum balls!
You need: 1 cup of icing sugar; 1 cup of ground almonds (blanched or not, you choose) OR any nut, or nut combo; 3 ounces of bittersweet chocolate, grated; 1/3 dark rum; 1 tsp of vanilla; 1/2 cup of sprinkles (chocolate – but any will do).
Mix everything up minus the sprinkles and only ¼ cup of the dark rum. You may be tempted to put more rum, but don’t because it will be too moist. You be the judge, but try these amounts first. Then chill it in the refrigerator. Pour what’s left of the good stuff in a bowl and the sprinkles in another bowl. Round your rum balls with a teaspoon. Roll them in the rum and then in the sprinkles. Let them dry on tray. Then refrigerate until firm. Don’t wait!
These keep well, and get better as they age. So enjoy them thru New Year’s, at least! The good stuff all year long! And they are still so special!
