LIKE POTATOES, BUT LOVE SWEET POTATOES
You may like potatoes, but if you are avoiding nightshade veggies, like our friend Tom Brady and his hot wife Gisele, then this may be a good option for you. Sweet potatoes are good for you on so many levels. But there is no time to discuss the goodness of sweet potatoes, only time to start cooking. So you can get to the eating. This recipe will yield 12 pieces.
THE INGREDIENTS YOU NEED
4 medium sweet potatoes
Olive oil (or your oil of choice)
3 tablespoons of melted butter
4 cloves of garlic, crushed
1 tablespoon fresh chopped parsley
Salt and Pepper to taste
2 tablespoons Parmesan (Parm) Cheese
THE INSTRUCTIONS WILL PLEASE YOU
You will need to pre-heat your oven to broil/grill to high heat. Wash your potatoes with a veggie wash and trim the ends off. You want to then cut the potatoes into about 1 ½ inch pieces. Then you have a choice to boil them or roast them. If you choose to boil them: boil them in water for about 25 minutes, or until fork-tender. Drain them afterwards. If you choose to roast them: bake your sweet potatoes for about 25 minutes or until they are fork-tender. Let them sit for five minutes or so, in order for your hands not to get burned while handling them. Grease a baking sheet with the oil, arrange the sweet potatoes on the sheet and then lightly smash each one with a fork.

SMASHING IS HAPPENING WITH THE PARM
After you smash them, mix together the butter, garlic and parsley. Pour this over the sweet potatoes and add salt and pepper and a little more oil. Then you need to broil/grill them until they are crispy for 15 minutes. When you remove them from the oven, sprinkle each one with parmesan cheese. Then put them back in the oven until the cheese is melted. Season to taste and enjoy your recovery meal. Make it in advance if you know you will be smashed!
